Sweet Treat Saturdays

This is the first Sweet Treat Saturday post!  Every Saturday, I am hoping to bring you a new recipe for a sweet treat.  If you've read my blog at all, you already know that I have a serious sweet tooth.  Fortunately, I don't believe that you have to completely banish all sweets from your diet in order to be healthy.  So, I'll be sharing recipes that are healthier alternatives to the main stream cakes and cookies, but that still taste delicious.

First up are almond muffins.  I found this recipe on another great blog Nutty About Health, and modified it just a bit.  They truly exceeded my expectations.  We had company over for dinner the night that I made them, so they got to test them out.  They thought they were great and couldn't believe that they were gluten-free!

Ingredients:

1 cup almond meal/flour (If you've never purchased this, prepare yourself for the sticker shock.  If you are gluten-free though, it's an amazing substitute for flour and totally worth it.)
1/4 tsp sea salt
1/2 tsp ground cinnamon
1/4 cup honey
1 1/2 tsp baking powder
2 large eggs
2 1/2 tbsp organic, unsalted butter
1 tbsp organic coconut oil

Directions:

1. Combine dry ingredients, and mix well.
2. In a small bowl, melt butter and coconut oil.
3. Add eggs and honey.  Stir until mixed.  
4. Add wet ingredients to dry ingredients and mix well.

5. Add batter to a greased muffin pan (makes about six)

6. Bake at 375 degrees for 12-15 minutes.

7. Let cool and store in fridge.


These are so light and fluffy.  The texture is amazing.  My favorite was to drizzle a little honey on top, but they are also great with almond butter.
